做法:春笋切成片后加少(shǎo )许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖(gài )焖。
