做法:春笋切成片(piàn )后加少许盐捞出后(hòu )用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽(chōu )、老抽(chōu )、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖。
