做(zuò )法(fǎ ):春笋(sǔn )切成(chéng )片(piàn )后加少许(xǔ )盐捞出后用(yòng )清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量(liàng )清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
