做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜(jiāng )切片(piàn ),葱切成(chéng )段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时(shí )盖(gài )上锅盖焖。
