做法:春笋切成片后加(jiā )少许盐(yán )捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入(rù )盐(yán ),翻炒均匀(yún )稍收汁时盖上(shàng )锅盖(gài )焖。
