做法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖(gài )大(dà )火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
