做法:春笋切成片后(hòu )加(jiā )少(shǎo )许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
