做法:春笋切成片后加(jiā )少(shǎo )许盐(yán )捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
