做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到水快熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖(mèn )。
