做法:春笋切成片后加少许(xǔ )盐(yán )捞(lāo )出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到(dào )水(shuǐ )快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
