做法(fǎ ):春笋切成片后加(jiā )少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
