做法:春笋切成片后(hòu )加少(shǎo )许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量(liàng )清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖(gài )焖。
