做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水(shuǐ )半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
