做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
