做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝(háo )油翻炒(chǎo )均(jun1 )匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖(gài )上锅盖(gài )大火煮开后转中火。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
