做法(fǎ ):春笋切(qiē )成片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮开后转(zhuǎn )中火(huǒ )。煮到水快(kuài )熬(áo )干的时(shí )候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
