做法:春(chūn )笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
