做法(fǎ ):春笋切(qiē )成(chéng )片(piàn )后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放(fàng )入生姜、春(chūn )笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
