做法:春笋切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时(shí )盖上(shàng )锅盖焖。
