做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒(chǎo )均匀稍(shāo )收汁(zhī )时盖上锅(guō )盖焖。
