做法:春笋切成片后加少许盐捞(lāo )出后(hòu )用清水(shuǐ )浸(jìn )泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水(shuǐ )快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
