做法(fǎ ):春笋切成(chéng )片后加少许(xǔ )盐捞出后用清(qīng )水浸(jìn )泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
