做法(fǎ ):春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成(chéng )段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开后(hòu )转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
