做法:春笋切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽(chōu )、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
