做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入(rù )少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干的(de )时(shí )候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
