做(zuò )法:春(chūn )笋切成(chéng )片后加(jiā )少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
