做(zuò )法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住(zhù )春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时(shí )盖上(shàng )锅(guō )盖焖。
