做法:春笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油(yóu ),放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
