做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
