做法:春(chūn )笋切成片后加少许盐捞出(chū )后(hòu )用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
