做法:春笋切成(chéng )片后(hòu )加少许(xǔ )盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒(chǎo )均(jun1 )匀稍(shāo )收汁(zhī )时盖上锅盖焖(mèn )。
