做法:春笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅盖焖。
