做法:春笋切成(chéng )片后(hòu )加少许盐捞出(chū )后用清水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上(shàng )锅(guō )盖焖(mèn )。
