做法:春笋切成片后加少(shǎo )许盐捞出(chū )后(hòu )用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开后转中(zhōng )火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
