做(zuò )法:春笋切成片后(hòu )加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁(zhī )时盖上锅盖(gài )焖。
