做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
