做法:春笋切成(chéng )片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬(áo )干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
