做法:春笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加(jiā )入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中(zhōng )火(huǒ )。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
