做法:春笋切成片后加少许盐(yán )捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖(mèn )。
