做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱(cōng )切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加(jiā )入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
