做法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成(chéng )段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀(yún )稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
