做(zuò )法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
