做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉(ròu )片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀(yún ),加入(rù )少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
