做法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍(shāo )收(shōu )汁时(shí )盖上锅盖焖。
