做法:春(chūn )笋切成片后加(jiā )少(shǎo )许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大(dà )火(huǒ )煮开后(hòu )转中(zhōng )火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
