做法:春笋切(qiē )成片后(hòu )加少许盐(yán )捞出后(hòu )用清水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到水快(kuài )熬干的时候加(jiā )入(rù )盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
