做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快(kuài )熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁(zhī )时(shí )盖上(shàng )锅盖焖。
