做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均(jun1 )匀(yún ),加入(rù )少量清(qīng )水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
