做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切(qiē )成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮开后(hòu )转中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
