做(zuò )法:春笋切成片后(hòu )加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快(kuài )熬(áo )干(gàn )的时(shí )候(hòu )加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
